Who doesn’t love Ambrosia Salad? This is such a simple, classic side dish that could also double as a dessert. Ambrosia salad is creamy, cool, and the perfect sweet. I channel my inner grandma and make this salad and it is always a hit. This would be perfect as a side dish for a BBQ or even Easter Dinner. I don’t know a church potluck that doesn’t include a yummy, old timey Ambrosia Salad.
You will need…
8 oz. Cool Whip (thawed…lite works well too)
1/2 cup sour cream
11 oz can of mandarin oranges (drained)
20 oz. crushed pineapple (drained)
1 teaspoon of vanilla extract
10 oz. maraschino cherries, (drained and chopped)
1 cup of sweetened coconut flakes
3 cups of miniature marshmallows
And the great debate of ambrosia salad…you can add pecans or walnuts if you wish.
Also, sometimes I add a few drops of red food coloring or the colored mini marshmallows as well.
In a large serving bowl fold in sour cream into the Cool Whip, as well as the vanilla extract.
Drain all fruit (oranges, pineapple and cherries). Fold in the coconut flakes and the canned fruit as well as marshmallows until combined.
Refrigerate until serving.
