Chicken Parmesan Pasta Bake

When my husband says “add this to the rotation” and gives me a big grin with his dimple I know I have a winner…in this case…winner, winner, chicken dinner (sorry, I couldn’t help myself). This was thrown together one night in an attempt to use what we had on hand. Pasta (check), marinara (check)…oh and some frozen chicken strips (check)…one of our favorite dinners was born. I hope it will be one of your favorites as well.

You will need…

1 pound of short cut pasta (cooked al dente and drained)
3 cups of shredded mozzarella cheese
1 jar of your favorite spaghetti sauce
1 cup of parmesan cheese
3 cups of diced up chicken strips…these were smaller and I think I cooked up the last 7
Italian seasoning (for garnishing)

Cook chicken strips (per package instructions).

While the chicken strips are cooking, boil your pasta and grate your cheeses.

Once the chicken is done cooking, cube it. The hardest part of this recipe was keeping my kids away from the perfectly bite-sized pieces of chicken.

In an oven safe dish (thank you Connie!) add all ingredients except parmesan cheese and 1 cup of mozzarella cheese.

Stir until combined.

Top with remaining cheeses and sprinkle on itallian seasoning. I cannot wait to tear some fresh basil to put on top of this.

Place in oven (just leave it on after you cook the chicken strips) until the cheese is melted and the pasta dish is bubbly…about 10 minutes.

Serve with a salad and some garden bread and enjoy!
