There are so many things that I love about the holidays and this Pumpkin Cheesecake is on the top of the list. This is the perfect dessert to bring along for Thanksgiving, Friendsgiving or any upcoming gathering. It is simple, yet looks thoughtful and that you spent hours preparing it.
You will need…
2 (8 oz) packages of cream cheese (room temperature)
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 cup pumpkin puree
1/2teaspoon ground cinnamon
1 pinch ground cloves
1 pinch ground nutmeg
1 prepared graham cracker crust
Preheat oven to 325
Combine cream cheese, sugar, and vanilla until well blended.
Mix in eggs on medium speed until just combined. Do not overbeat.
Remove one cup of bather (set it aside).
Add remaining ingredients (pumpkin puree, cinnamon, cloves and nutmeg)and stir in gently.
In pie crust, pour in the set aside cup of cheesecake filling (the white mixture).
On top, gently pour in the pumpkin cheesecake mixture.
Bake for 35-40 minutes.
Let the cheesecake cool and serve with whipped cream.
