I whipped this meal up quick on Monday night. It is one of our new favorite recipes. Not only is it quick (30 minutes or less), it can be made using one pot! Warm, comforting, cheesey, and full of classic flavors, this will become one of your families favorite meals.
You will need.
1 smoked sausage (I used Polska Kielbasa)
1/2 cup diced onion
2 cloves of garlic
1 teaspoon of EVOO
2 cups of chicken broth
1/2 cup of whipping cream
1 can of cream of mushroom soup
1/2 pound of dried pasta (you can use penne or any other short cut pasta)
1 1/2 cup shredded monteray jack cheese
1 1/2 cup mozerella cheese
2 cups of French’s French fried onions
Begin by slicing the sausage and dicing the onions. Over medium heat brown the sausage and onions in a little EVOO. Once the sausage starts to brown add the garlic and stir for about 30 seconds.
Add the chicken broth, cream and mushroom soup, stir and bring to a boil.
Once it is bubbly, add the dried pasta, cover with a lid and simmer for 15 minutes.
Once the pasta is cooked, mix in 2 cups of cheese and stir until combined and melted.
Top with remaining cup of cheese and French fried onions.
Broil on high for about 2 minutes or until the onions brown.
