We love a meatball sub in our house for a quick dinner, but they are often big, bulky and a little messy and super filling. Saturday night I pulled all the ingredients together for some quick and easy meatballs and decided to make sliders. My kids will eat anything “slider”. It is a yummy take on the meatball sub!
You will need…
1 pound of ground beef
1/2 cup Panko crumbs (or bread crumbs or crushed saltines)
2 garlic cloves, finely minced
1 teaspoon Italian seasoning
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup milk
2 tablespoons of EVOO
1/2 medium onion, diced
1 jar of your favorite marinara sauce
12 dinner rolls…I love buying the yeast rolls from the bakery
6 slices of provolone cheese sliced in half
In a bowl, mix meat with panko crumbs, garlic, salt, Italian seasoning, onion powder, pepper, and milk. Roll into heaping tablespoon-sized meatballs.
Heat olive oil in a large skillet over medium heat. Add onions and cook for one minute.
Add meatballs between the onions and brown for two to three minutes. The meatballs will be close together. Don’t forget to turn and brown on the other side for another two or three minutes.
Pour the marinara over the meatballs and gently shake the pan to mix. Put on lid and allow to simmer for 20 minutes.
The sauce will be bubbly and hot.
When ready to serve, cut each dinner roll in half, place the cheese on each roll and spoon a meatball and desired amount of sauce onto each bun. Top with another piece of cheese.
