Baked Ziti

I am always trying to copy cat my favorite dishes from restaurants I love and making them simple and easy to get on the table during a busy work night. When I was in college there was an Italian diner named Lenny’s and they made the best baked ziti. I knew my kids would flip for this dish, and boy did they.

You will need…

1 pound of Ziti noodles (if you can’t find them penne works great as well)
1 pound of ground beef
15 oz Ricotta cheese
3 cups shredded mozzarella cheese
1 cup parmesan cheese
1/2 cup chopped onion
1/4 cup butter
24 oz Marinara sauce

Preheat oven to 350 and spray a 13×9 pan with cooking spray.

Boil ziti to al dente in salted water. While pasta is cooking, brown the beef with the chopped onions.

Mix 2 cups of mozzarella, 1/2 cup of parmesan, and the ricotta cheese. Mix in marinara sauce.

Once the ground beef is cooked, drain. Next, strain the pasta. Put the pasta immediately back into the hot pot and stir quickly to remove any excess water. Add the pasta and ground beef to the marinara and cheese mixture. Mixing well.

Grease a 13×9 pan and add the pasta mixture to the pan.

Top with remaining parmesan and mozzarella cheese. Dot the top with butter.

Bake at 350 for 40 minutes, until the top is bubbly and brown.

Serve alongside a salad and some garlic bread.
