Guy has his second football game this morning and while we are so excited to watch him, we are even more excited for this treat! When school starts back up each fall I start dreaming of peanut butter and jelly and these bars bring this flavor combo to a whole new level. Also, you will want to have a glass of ice cold milk close by!
You will need…
2 sticks of room temperature butter
1 1/2 cup sugar
1 teaspoon vanilla extract
2 eggs (room temperature)
2 cups of creamy peanut butter
3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups of your favorite jam/preserves (I love raspberry but strawberry or grape would be just as good!)
3/4 cup coarsely chopped salted peanuts
Begin by preheating your oven to 350 degrees and spraying a 13×9″ pan with PAM. You could also line the dish with parchment paper.
Cream butter and sugar on high speed for about 2 minutes.
Add vanilla, eggs and peanut butter until well combined.
In a separate bowl add flour, baking powder and salt. Mix with a fork and then add to the wet ingredients. Mix until just combined. The batter will be thick.
Spread 2/3 of the dough into the bottom of the greased pan and press down with your hands.
Spread jam evenly over the dough.
Drop small globs of the remaining dough over the jam and sprinkle with chopped nuts.
Bake for 45 minutes until golden brown.
