It has been a hot minute since I have shared a recipe on this little place and I am back! To me there is nothing better than preparing and sharing a meal with my family. One of our favorite weekly traditions…is taco Tuesday…followed closely by Pizza Friday…both of these days are a thang in our house. While we love traditional tacos, it is always fun to mix it up a little and this recipe could not be any simpler and more delish…especially with a big ol’ dollop of homemade guacamole and sour cream to top it off.
Here is what you need…
4 boneless, skinless chicken breasts, boiled and shredded
10 crunchy taco shells…I love the ones with the flat bottom
1 1/2 cup of cheddar cheese
1 small can of tomato paste
1 can of refried beans
1 package of taco seasoning
Pre heat oven to 350.
Begin by baking or boiling your chicken, I usually boil for this recipe. Once cooked completely, shred.
Next, in a 13×9 pan, arrange the taco shells standing up…this can get a little tricky.
Stir tomato paste, refried beans, taco seasoning, and chicken together. On a side note, there is not flattering way to make this look delicious…just know it absolutely is!
Stuff the shells with the mixture…about 1/4 to 1/2 of a cup of the mixture…in each shell. Top with cheese.
Place in over and bake for 20 minutes.
Top with your favorite toppings.
