Is there anything better than a side of cheesey hot potatoes that you know are not healthy, but so yummy? Let me answer that…no! These are the perfect side to bring to a potluck or to indulge on at home!
You will need…
2 10 3/4 oz cream of chicken soup
1 cup sour cream
8 oz of cream cheese (softened)
30-32 oz southern style hash browns
3/4 cup green onions (diced)
3 cups sharp cheddar (shredded)
1 cup swiss cheese (shredded)
Preheat your oven to 375. Grease a 13×9 cake pan. Begin by preparing all ingredients. Shred the cheeses, dice the onions and mix the cream cheese, sour cream and cream of chicken soup. Set aside one cup of cheddar cheese for topping.
Mix cheeses, onions, hash browns, soup and sour cream together into a big bowl and place into the baking dish. Next, top with remaining cheddar cheese.
Bake for 60-75 minutes, covered with foil.
