Comfort food at it’s finest. Not only is stuffed shells a comfort food, it is a quick, simple, and easy dinner for those busy weeknights. This is a family favorite and I am sure it will quickly become one in your home as well.
You will need…
1 box of jumbo shells, cooked and drizzled with a little bit of EVOO to prevent them from sticking together
2 cups of cooked and shredded chicken
1 jar of your favorite spaghetti sauce
1 container of Ricotta Cheese
1 cup parmesan cheese
2 cups of grated mozzarella cheese
1 egg
1 tablespoon of flat leaf parsley (optional)
Begin by boiling the noodles until cooked al’ dente. Preheat oven to 350 degrees
In a separate bowl, mix the egg, 1 cup of mozzarella cheese, ricotta cheese and parmesan cheese together.
Next, add the shredded chicken and parsley to the cheese mixture. Mix until combined.
In a 13×9 pan, spread 1 cup of the spaghetti sauce over the bottom of the pan. This prevents the noodles from baking to the bottom of your pan.
Spoon cheese and chicken mixture into cooked shells.
Arrange shells into the 13×9″ pan.
Pour remaining spaghetti sauce over the top of the stuffed shells and sprinkle the remaining mozzarella cheese over the top. Cover with foil. Bake for 30 minutes.
Serve and enjoy!
