These Pumpkin Dream Bars are everything your “everything pumpkin loving” heart can imagine. This is a great dessert for a potluck or just to have as a sweet treat for after school. Get ready, because your socks are about to be knocked off!
You will need…
1 cup butter (softened to room temperature)
1/2 cup packed brown sugar
1 cup granulated sugar
2 teaspoons vanilla extract
1 cup pumpkin puree
3 cups all-purpose flour
1 pinch of salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 cup white chocolate chips
1/2 cup pumpkin spice baking chips (optional)
For the topping…
1/4 cup sugar
2 tablespoons cinnamon
Preheat oven to 350 degrees and grease a 5×9 baking dish.
Blend together butter and sugars. Add in vanilla, eggs and pumpkin puree until combined.
In a seperate bowl combine all dry ingredients (flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves). Stir together.
Add the dry ingredients to the wet ingredients. Mix until combined.
Once all the ingredients are mixed, add the white chocolate chips and the pumpkin spice chips to the batter.
Spread evenly into a greased cake pan (I used a 13 x 9 cake pan) and top with cinnamon-sugar spread. I evenly sprinkle it over the top.
Bake for 35-45 minutes or until done (insert a toothpick in the middle and if it comes out clean, your bars are done).
This is the most heavenly pumpkin bar recipe you will ever find. Moist, full of flavor, and such a treat. Slice into bars and dig in.
This is the stuff pumpkin dreams are made of!
