I have so many garden fresh tomatoes and am always looking for ways to use them. My family loves spaghetti and so I thought I would whip them up a fresh sauce. This is an easy recipe and you can easily used canned tomatoes if you don’t have fresh. This recipe is perfect for pasta, but also spaghetti squash or ad a dipping sauce as well.
You will need…
Peeled tomatoes, I used about 2 pounds worth.
2-4 cloves of garlic, minced
1 cup of onions, diced
1 tablespoon of EVOO
1 tablespoon of sugar
1 tablespoon of dried oregano leaves
1 teaspoon of crushed red pepper (optional)
2 tablespoon of fresh basil (sliced or torn) ADD an additional 2 for garnish if you wish
***AND you may need garlic powder or salt to taste*** We just enjoyed it without because I added 4-5 cloves***
Begin by placing your frying pan on medium high heat, and add one tablespoon of EVOO and let it get hot. Next add minced garlic cloves and onions to the hot pan. Cook until translucent (almost see-through) or for about 2 minutes.
Next, add peeled or canned tomatoes to the pan.
Add oregano, sugar, and crushed red pepper.
Stir mixture together. The tomatoes will begin to “pop”, continue to stir the sauce for about 5 minutes, then add the 2 tablespoons of chopped, fresh basil.
As the sauce simmers, it will begin to cook down and become thicker. Don’t worry if it seems thin and watery at first, the sauce will thicken the longer it cooks. Keep your stove top on medium to medium high heat. After about 15-20 minutes or until you have your desired consistency, it is finished.
Add to the to your favorite dish that requires marinara sauce. This is versatile and is delicious. The flavors are simple and it is a healthy sauce. I hope you enjoy!
