Mediterranean Zoodle Salad

My garden is  bursting with zucchini and tomatoes. I thought I would share with you a favorite lunch that is lite and delicious, full of flavor, and take away cravings for pasta salad.

You will need…

1 medium zucchini (unless you are going to a potluck, use two or three)
1 cup of diced tomatoes
1/4 cup of feta cheese
1/2 cup of a medium onion, diced
Kalamatta or black olives (however many you would like)-I diced up a small handful ~1/4 cup
Your favorite Italian dressing

Begin by spiraliziing your zucchini. Use a paper towel to squeeze the zoodles gently and remove excess moisture.

Next, dice tomatoes and the onion and chop the olives.

Add veggies and Feta to the zoodles.

Drizzle as much dressing as you would like over the top and mix.

Cover and chill for at least 90 minutes to let all the flavors meld together.

    1. I got a cheap, As Seen on TV one…The Vagetti (worst name ever!) but it works so well and was really affordable (at the WalMart). 🙂

  1. I have still never tried zoodles. I know it makes me sound like a kid, but I just can’t stand the idea. I really love noodles and am worried it would gross me out, lololol. I am like 6 right now.

    1. Beth that is too funny!!!! I love pasta and this was a great alternative but I would NOT suggest you try it! :)Hahahaha!!!

    1. I hope you like it Laura! Just remember to press a paper towel on the spiralized zoodles or else they get really watery. My first try was a flop because of it! 🙂 I hope you enjoy it!

    1. It was super affordable and in the As Seen on TV section of WalMart. I use the Vagetti. What an awful name, but I love it!

    1. Thank you Laura! My biggest piece of advice is to dry the noodles really well with a towel and try to get as much liquid from the zoodles or you will end up with a soup 🙂
