My garden is bursting with zucchini and tomatoes. I thought I would share with you a favorite lunch that is lite and delicious, full of flavor, and take away cravings for pasta salad.
You will need…
1 medium zucchini (unless you are going to a potluck, use two or three)
1 cup of diced tomatoes
1/4 cup of feta cheese
1/2 cup of a medium onion, diced
Kalamatta or black olives (however many you would like)-I diced up a small handful ~1/4 cup
Your favorite Italian dressing
Begin by spiraliziing your zucchini. Use a paper towel to squeeze the zoodles gently and remove excess moisture.
Next, dice tomatoes and the onion and chop the olives.
Add veggies and Feta to the zoodles.
Drizzle as much dressing as you would like over the top and mix.
Cover and chill for at least 90 minutes to let all the flavors meld together.
