Banana Nut Muffins

Muffins are a favorite breakfast and snack around this house. Nothing says made with love, quite like a freshly baked muffin. Here is my easy recipe for Banana Nut Muffins, which go perfectly with hot coffee or tea…hint, hint! Also, if you didn’t want to make these into muffins, just use a bread pan and bake for 45-50 minutes.

You will need…

4 mashed bananas
1/3 cup butter (softened to room temperature)
1/2 cup sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cup flour
1 teaspoon baking poweder
1/2  teaspoon baking soda
1 cup chopped nuts (optional-I used walnuts but you could also use pecans)

Begin by mashing your bananas. I like using my potato masher for this. *HINT* as your bananas start to get a little brown on your counter throw them in the freezer (they will turn black) and then when you want banana bread or muffins you can thaw them and smash them…the riper/black the better!

Cream together shortening and sugar. Add eggs and vanilla, mix well.

Next, add flour and baking powder and soda and mix.

Mix in nuts and bananas.

Fill cupcake liners 3/4 of the way full with batter. For even easier cleanup, I spray my muffin pan with PAM.

Bake at 350 for 20 minutes (depending on your oven).

Cool and enjoy! I like mine with coffee or tea and my kids like theirs with milk.
