Meal Planning Sunday #26


Happy Sunday! I have a confession to make. Last week I did not meal plan or grocery shop. Who am I? Do you ever get to a point where your cupboards are full and your fridge is full at the end of your meal plan? We had so much stuff so I literally winged it all week. We had grilled hot dogs, hamburgers (but Brandon had to eat his hamburger on white bread because we only had two buns and I used a lettuce bun), bean and cheese burritos, and lunches were as random as random can get. Ever have a week like that? Now that my fridge and cupboards are EMPTY I went shopping and am ready for the week ahead…

Sunday: Slow Cooker Pulled Pork I am only adding BBQ sauce to 1/2 and then saving the other 1/2 of the meat for street tacos later in the week. For the pulled pork sandwiches, I am going to use the pretzel rolls from Costco. YUM!


Monday: Street Tacos. I use the shredded pork, some purple cabbage and diced onions with a squirt of lime juice, fresh cilantro, and warmed up corn tortillas. I also serve spanish rice and refried beans alongside this dish. It is so yummy!

Tuesday: 4th of July and Burgers! You should try my Wife Burger!


Wednesday: Leftovers…tacos and pulled pork.

Thursday: Spicy Sausage Pasta  This is a hands-down favorite around here. It is NOT healthy at all but when the craving hits, you have to have it!

Friday: Grilled pizza night! I am going to make mine a Margharitta pizza (EVOO, fresh basil, mozzarella, tomatoes and a pinch of salt).

Saturday: Grilled chicken thighs with grilled veggies (squash and onions) and a big side salad.

What is on your menu this week? Ever have a week where you just don’t meal plan and piece together each meal? That was a little stressful at times for this Type A planner but it was kind of funny what we came up with to eat. I hope you are enjoying your weekend!

  1. girl, we ate sandwiches and cereal last week pretty much every night! I cooked twice and once was nachos!! LOL
    love you meal planning-I’ve got to start back!

    1. It was rough last week but feeling much better about this week! Plus we just don’t eat normal food in the summer for dinner 🙂 Lots of salads or sandwiches!
