Grilled Chicken and Veggie Sandwiches

If you need a simple but yummy and healthy dinner idea that is quick to get on the table, look no further. These grilled chicken and veggie sandwiches are so yummy and filling, and pair nicely with a salad or watermelon.



You will need:

2 pounds of boneless, skinless chicken breast (thawed and seasoned with your favorite)
2 green bell peppers
2 small onions or one large onion. One Walla Walla Sweet works well with this!
Your favorite deli cheese. My husband loves pepper jack on this sandwich

Start by heating up your grill and seasoning the chicken. Line a cookie sheet with foil and spray with PAM. Next, slice your peppers and onions and place them on the foil-lined cookie sheet.



Once the grill is hot (high heat) place the chicken breasts  and sliced peppers and onions (which are on a foil lined cookie sheet) on the grill for 15-20 minutes.


While the chicken is cooking, turn your broiler on. When the chicken and veggies are finished cooking, remove from grill. While the chicken is resing, place hoagies with cheese in the broiler to toast.


Shred or cut the chicken into bite size pieces and pile the hoagies high with veggies and chicken. Enjoy!
