This pasta salad is so simple, easy to assemble, and fresh. It is lite and easy to pack for lunches, or makes a great side. The best part, it is perfect for potlucks because it does not have mayo or miracle whip.
To make this pasta salad you will need…
1 pound of prepared pasta (I like using penne)
3 cups of diced cherry tomatoes (or any tomato cut into bite size pieces)
1 cup Parmesan cheese
2 cups of fresh torn or chopped basil (I leave mine in bigger chunks-about the size of a dime)
2 tablespoons of EVOO. I love using this infused variety but plain works just as well.
1 pinch of sea salt (not pictured)
Boil and cook pasta until Al dente, drain, and drizzle with 2 tablespoons of EVOO, stir to coat the noodles. Let cool completely.
Meanwhile, chop the cherry tomatoes and tear the basil. I also lightly salt the tomatoes.
Once the pasta is completely cooled, add basil, tomatoes, and Parmesan cheese.
Mix until combined.
Serve and enjoy!
