Meal Planning Sunday #19

This is the week before Spring Break, we have soccer, baseball, and more soccer practices so I am making easy to prep ahead meals to get dinner on the table a little quicker, but still ensuring we are eating healthy.

Sunday: Pulled Pork Sandwiches. I like serving these with homemade jo-jo’s and a big side salad. I also love making some homemade coleslaw to add to the top of the sandwiches. Do you add coleslaw to the top of your pulled pork sandwiches?

Monday: Burrito bowls using the left over pork.

Tuesday: Taco salad. Instead of meat, I will use black beans. For the taco meat I like using ground turkey. My husband doesn’t mind and cannot really tell the difference and either can my kiddos. I love meals like this because you can customize it. Guy only likes the taco meat with a little tomato and cheese while Maddi likes all the veggies.

Wednesday: BLT’s and a chopped brussel sprout salad with lemon vinaigrette.

Thursday:  Grilled chicken and veggie sandwiches. I will just eat mine sans bun. I like sauteing peppers and onions to serve on top of grilled chicken.

Friday: Pizza Night!!! I love using the Pioneer Woman’s pizza crust recipe.

Saturday: Olive Garden fake-out salad and bread sticks. I love making copy-cat recipes of some of our favorite restaurants that we do not have local. #smalltownproblems

To make dinner a little easier this week I will chop all the veggies for the burrito bowls, sandwiches, and salads ahead of time. I will also cook the taco meat on Sunday. Working ahead like this allows for easier dinners. Also, using meat for two different meals is a time saver as well (pulled pork sandwiches and then burrito bowls the next day).

    1. Stephanie, that was me last week. I usually meal plan but we had such a busy weekend that I wasn’t able to meal plan or grocery shop…it threw my entire week off! What is on your meal plans this week?

  1. love your meal plans……..I used to meal plan every week, but well I suck lately and haven’t been! it really stresses me too……I need to work on getting organized again!
