Overnight Oats

I have NEVER enjoyed oatmeal. I remember eating it in my college dorm because it was quick, easy, and cheap, but I remember not enjoying it and just forcing myself to eat it. That only lasted a few weeks. Fast forward to February 2017 and I cannot get enough of these overnight oats! This is a quick breakfast on the go that takes little prep and effort but it is filling and healthy.

I like using:

1/4 cup of steel cut oats
1/4 cup of almond milk
a small mason jar

You can also use:

old fashioned oats/rolled oats
milk of your choice (skim/2%/soy…whatever you like or have on hand)

*Just make sure that the milk to oat ratio is the same.

First, place oats in the mason jar.

Add almond milk and close the lid. Place in the refrigerator over night or for at least four hours.

In the morning, place oats in a bowl and add toppings.

Here are some topping options for you…

I love adding 1 tablespoon of chia seeds to my oats.

Peanut butter and Jelly Oats

These are so yummy. I add 1 tablespoon of almond butter or Adams peanut butter to the oats, I add 1 tablespoon of organic raspberry preserves (read the label and make sure you are getting one with whole-food ingredients and low sugar). I like to add fresh raspberries to the mix as well.

Berry Melody: I add toasted coconut (1 tablespoon) and blueberries and raspberries. I also like adding 1 tablespoon of honey to the mix as well.

Other toppings I like to use are mandarin oranges and pineapple with toasted cocounut. I did not have a picture of this…but this is a yummy mix as well.

Even my kids love over night oats. They love the berry melody oats the best. They like adding strawberries as well.

This is a filling, healthy, and easy breakfast that will start your day off right.
