This week is all about fresh, lite, and low-carb..
Sunday: Chicken Parmasean cups and a side salad.
Monday: Veggie Stir-fry.
Tuesday: Grilled steaks (Costco has the best) and baked potatoes with grilled brocollini.
Wednesday: Taco cups
Thursday: Taco salad. I use ground Jenny-O turkey for all my taco meat. Not only is this a healthy option, my husband (who is a red meat lover) also LOVES this stuff. It is a win-win.
Friday: Homemade grilled pizzas. Or we might go out for dinner on this night because my Mother-in-Law will be here as well.
I feel like I have been eating food all day long these past two weeks. For breakfast (7:00) I have 1/2 a cup of greek yogurt with raspberries.
For a morning snack (9:30) Brandon and I have both been eating apples.
For lunch I have been eating fresh pinapple and 1 cup of cottage cheese along with some snap peas or other veggie.
For afternoon snack I have been having almonds (around 10) and 1/2 a cup of grapes.
Then after my run I have about 3 Tablespoons of trail mix for a recovery snack.
All of this has helped me enjoy dinners but also curb my hunger throughout the day. I have also been making sure to drink at least 100 ounces of water each day.
