Happy New Year! I hope you are able to rest and recover from the long night last night. We stayed home and ate take out and stayed in our comfy clothes and watched the ball drop from our living room. It was glamorous and fancy! #not I am headed back to work this week and focusing on some healthier meals. Here is my menu for the coming week.
Sunday: Chicken Nachos. The kids and Brandon will have the nacho part, I am going to grill and shred the chicken and then use mine as a salad topper.
Monday: Baked potatoes. We love a baked potato bar on a busy night. Did you know that you can wrap your potatoes in foil and “bake” them in a crock pot all day on low? I have Monday off so will bake mine the regular way, but sometimes when I need dinner to be ready I will use the crock pot method and prep all the toppings. Topping on this night will include broccoli, chili, and other traditional toppings.
Tuesday: Taco Salad Tuesday. I am making taco salads, but instead of using beef I am going to use ground turkey. Have you ever tried substituting ground turkey for ground beef? My kids cannot tell a difference when paired with taco seasoning.
Wednesday: Homemade chicken tenders. I bake these crunchy little tenders up and serve with homemade honey mustard or ranch dip. I serve alongside a side salad and crispy crowns (the best little tator tots).
Thursday: Cobb Salad. Lemon marinated chicken, avocados, hard boiled eggs, blue cheese dressing, crunchy lettuce, and other veggies make this salad filling enough for a main dish. I lay all the fixings out and we build our own salads. My kids also help wash and chop the veggies so they are more willing to eat the salads.
Friday: Homemade pizza. It is going to be too cold to grill the pizza (boo) but we will still each make our own. The kids love building their own pizzas. My favorite is a margherita pizza (fresh mozzarella, sliced tomatoes and fresh basil on top of EVOO). Light and delish and perfect for a Friday night.
