Welcome! It is the home stretch, Thanksgiving week. I have said in the past that I host between 20 and 30 people in our home each year. This weekend I had to create a menu which did not take up too much fridge space, but also I did not want many leftovers. I also needed quick, easy, and simple this week.
Sunday: Football food. Have you ever heard of Washington Nachos? Waffle fries with nacho toppings. YUM!
Monday: Chicken Fettuccine Alfredo. My favorite Alfredo sauce is from the Betty Crocker cookbook. You can find it here. I like to serve this with a big side salad.
Tuesday: Chicken quesadillas and a side salad.
Wednesday: I picked up a dish of homemade mac and cheese from Costco. It cooks in it’s own pan and I am going to cook it on our grill. This will be so helpful while preparing for Thanksgiving the next day.
Thursday: Thanksgiving Dinner
Friday: The best part of hosting Thanksgiving is all the leftovers (I also make sure that no one leaves empty handed).
Saturday: Ham and bean soup. I love using the left over ham to make this yummy soup and I serve it with crusty rolls.

I’ve never heard of Washington Nachos, but it sounds delicious!! We have a very similar menu this week. I want simple so I can enjoy the week with the family.
I’ve never thought about cooking macaroni on the grill either. My husband would be all about that!!
