Thanksgiving in a bowl is how I would describe this salad. Crispy brussel sprouts mixed with spinach, crunchy pecans and sweet crasins, lightly tossed with feta cheese and bright lemon vinaigrette.
You will need:
1 pound of brussel sprouts (rinse with water and trim)
3 cups of fresh baby spinach
1/2 cup of crasins
1/2 cup of chopped pecans
1/3 cup feta cheese
For the vinaigrette:
2 tablespoons of EVOO
pinch of salt
pinch of pepper
Mix well and set aside.
First rinse and trim (if needed) the brussel sprouts, then chop finely.
Next, mix the brussel sprouts with the baby spinach.
Add the feta cheese, crasins, chopped pecans, and add the vinaigrette. Mix well and enjoy.
This salad is packed full of Thanksgiving flavors and would be an excellent light side to accompany your holiday meals.
