Taco Soup

Today I am linking up with Heather and Johannah to share my favorite taco soup recipe.

A steaming hot bowl of comfort. In the fall and winter Sundays are made of Jesus, football and a big bowl of soup. Nothing warms my family like a big bowl of soup. One of our favorite soups is Taco Soup. This Taco Soup is quick to prep and then simmers for up to three hours before serving. Also, you might have the majority of the ingredients in your pantry.

You will need:

1 packet or 1/4 cup of taco seasoning
1 medium onion or 1 cup of diced onions, plus more for topping.
2 15 oz. cans of pinto beans
1 15 oz. can of kidney beans
28 oz. diced tomatoes
15 oz. tomato sauce
1 lb. hamburger
15 oz. of water

Brown ground beef in stock pot. While beef is browning, dice half of the onion. Add the onion when the beef is still a little pink to soften.

While ground beef and onions are cooking, drain and rinse the three cans of beans.

Once the meat and onions are cooked, drain (if needed) and add beans, tomatoes (both cans) and taco seasoning. Add one can (15 oz.) of water.

Mix together and let simmer for at least two hours. Top with your favorite toppings, ours include crushed tortilla chips, cheese, diced onions, and sour cream.

This is the perfect meal for a Sunday evening of football watching.
